In the midst of this long, cold (and busy) winter, hearty soups have often filled in as my meal of choice. If I’m feeling fancy, I might follow a recipe but more often than not my soups are an improvisation of ingredients waiting in the fridge.
While I do save my veggie scraps to make big batches of stock (then reduce to a concentrate & save in the freezer) a winter like this tests my supply! Sometimes I find myself ready to make a nourishing soup without any stock on hand. Luckily, it’s easy to get a good, flavorful base going with just a few staples from the fridge.

Since being pregnant with my first child last year, I’ve become increasingly committed to ensuring our family is eating healthy, fresh food. Since then I’ve become one busy mama, so efficiency is now also incredibly important. I’m a big proponent of cooking once and eating twice, but it’s also nice to have some staple fridge clean-out meals in mind, ready to deploy when your leftovers are becoming unruly.

I’m in the south of France with my husband who’s traveling for work. As soon as we settled in to the apartment we will call home for the next week, I ran off to the store. I love exploring the aisles of groceries in other parts of the world. Immediately I noticed that most of the fresh produce was grown right here in France. Those that weren’t came from nearby Spain and Italy. How refreshing!
